I love the BBQ Pit Boys

I have done up 4 of their recipes so far and everyone I would do again.

I just wish there was a gator around here so I could try a stuffed gator.

Has anyone else done any of their recipes??

Or do you have a favorite one that's been past down by family members or maybe one of your own that you could share.

I love bbq, being in Scotland we don’t always have the weather. One of my go to recipes is a long smoked beef short rib over a wood mix.
The rub is really simple: fresh ground coffee, long pepper, sea salt, pink and black crushed peppercorns. 12 hours later and several cold
ones perfection.

If you are not using a pellet grill then you need to get one as soon as possible, it is a life changer!

 

I currently have a 11lb pork shoulder that I am going to smoke all day tomorrow and then turn it into some delicious pulled pork for sandwiches!

Funkyliljunkie do you inject your butt before putting on the smoker?

I mix up some apple juice, rub, apple cider vinegar and inject a few hundred ml into butt.

I BBQ when I can manage it. But having cooked professionally, I typically end up experimenting with new stuff to smoke. 

 

This coming summer I'm going to take the entire pig belly out of my freezer and make bacon.

I know a guy that smoked some pork belly to make bacon and then turned around and smoked some macaroni and cheese with some of that homemade bacon in it.  That shit was hella good.  That shit was magnificent.  That shit was marvelous.

I love to BBQ, charcoal grill, Ribeye steak seasoned with a cowboy rub it has all the usual suspects garlic, brown sugar, coffee, cocoa powder, salt, pepper and I add a pinch of cayenne pepper for a little bit of heat, rub the steak and let it sit for 20-30 mins or however long you want. 

 

While the grill is getting ready I make pouches of potatoes, take aluminum foil and peel and slice into 1/4's then slice into small chunks like for making home fries, add sliced onions, bacon bits and a few nobs of butter and salt and pepper to taste wrap them into little pouches let them cook for about 20 mins or until tender.

 

I like to grill asparagus and summer and zucchini squash with just salt and pepper in a grill pan

 

Then when everything else is off the grill put the steaks on and cook to desired doneness

Being from the BBQ capital of the world (Memphis), I BBQ at least 2 times a month and some time more. BBQing is like a right of passage where I'm from and everyone has their own little tricks and seasonings they use around here to help distinguish their BBQ from others. I make my own marinade sauce that I sit my meat in for over 24 hours, I make my own rub that I sit my meat in for 12-24 hours, I add a few seasonings and flavored woodchips to my charcoal and finally everything is prepared for grilling. It's about a 2 day process before I actually fire up the grill.

Also if you haven't tried grilled cabbage I suggest you go to the market now and grab some. I cut up my cabbage, place it all on some aluminum foil, add about table spoon of garlic and herb marinade, about a table spoon of Italian dressing, cut up some onion and peppers, cut up some beef sausage into some portions and add it all to the cabbage, fold the foil and put it on the top rack of the grill. Thanks me later.

I had an uncle that designed his own BBQ smoker for his 1968 Freedom Celebration. (This was in 1969)

After a few months of testing he went to get a patent on the BBQ smoker. 

After the paperwork was turned in, about 3 weeks later, 4 men in overalls and straw hats appeared at his door and asked to see the BBQ smoker.

He took them to his patio and they proceeded to remove the BBQ from the BBQ smoker. They took his wood chips and his massive hog and when they left, they said this:

"If you ever do this again we won't be held accountable to what might happen to you". 

He never smoked a brisket again after that day.

I don't make a whole lot of bbq myself but I do love it.  There's a few places around my city I'll go to like Adam's Rib which has amazing everything. Side note I also had a Korean BBQ pork shoulder sandwich today that was phenomenal!

I have a smoker-grill, and there is nothing better than a slow-smoked pork roast. A good rub, some great sauce. Shred it when it is done, add the slaw and life is good!
