Who else that plays this game enjoys cooking.  I really enjoy making food and seeing the enjoyment people get out of it.  I love cooking on the barbecue, but also doing roast dinners like leg of lamb or roast pork belly.  The thing I really want to try my hand at making next is harissa paste

Would be interested in hearing from anyone else what they like to cook

  DIMILAZZO’S KILLER MAC AND CHEESE WITH SWINE AND FUNGI

 

1 Packet elbow macaroni

1 lb bacon

1 block sharp cheddar cheese

1 lb button mushrooms

1 onion sliced thinly

1 TBSP minced garlic

¼ lb butter

1C panko bread crumbs

4 TBSP flour

1C milk

 

  1.  HEAT OVEN TO 180c
  2. Place the bacon in a single layer on a baking dish and cook for about 15 minutes-  check it as you want it to crisp, not burn.   remove the bacon and set aside.  Will need to do about 3 batches to crisp all the bacon
  3. Slice the mushrooms fairly thin
  4. Place a skillet on medium high heat and add around a tablespoon of butter to the pan.  Add the mushrooms in a single layer and cook for about 5 minutes or until browned.  Turn them over and brown on the other side.  Remove with a slotted spoon and set aside.  Will need to do about 4 batches until you get all the mushrooms browned.  Do not overcrowd the pan or the mushrooms will just steam and not brown.
  5. Place another tablespoon of butter in the pan and once melted,  add the onion and saute for about 5 minutes or until translucent.  Add the minced garlic and cook for about another minute. Remove and set aside
  6. Grate the cheddar cheese.  You probably only need about half the block of sharp cheddar cheese.
  7. Place a sauce pan over medium heat.  Add 4TBSP of flour along with 4 TBSP of butter stirring frequently and cook for about 1 minutes.  Add !C milk-  you may end up needing slightly more milk.  Stirring frequently and cook until the sauce boils.  Remove from the heat and add about 2/3 of the grated cheese.  Stir until the cheese is incorporated into the sauce.
  8. Fill a large stock pot about half full of cold water and add 2TBSP of salt to the water.  Put on high heat.  Once the water boils, add the package of elbow macaroni and boil for about 5 minutes stirring occasionally to keep it from sticking.  Drain the macaroni
  9. Chop the bacon into small pieces.
  10. Take a large bowl and combine the macaroni, onion and garlic, bacon and the cheese sauce  use a large spoon to mix it all thoroughly.  Pour the mixture into a dutch oven or a large casserole dish .  sprinkle the remaining 1/3 of the grated cheddar cheese over the top.  Sprinkle the panko bread crumbs over the top of that.  
  11. Place in oven and bake at 180C  (350F) for approximately 25 minutes

I lived alone for a while so yeah, i like cooking. No other way... my favourite are pasta ones, chicken and soups.

I'm not good at cooking. Not at all. I'm reluctant to even try most things. It's the timing, I always manage to mess that up. Some things are at the perfect state at the perfect time, then they end up not being because they have to wait for other bits that are still to finish. Some things are hot, some just way past the point of good eating. I'm hopeless. But I do enjoy trying now and then.

As long as I have a back up option for when things go wrong.
