Try making a Rum Ham! ... Soak it in Bacardi 151 for about 24 hours, then bake it, basting with something like a spiced rum, Captain Morgan maybe. And serve! |

Dry the shit out of your scallops before you sear them, and they're medium rare when they start providing a soft spring when you poke them. |
